Transformation Tuesday

Seeing Bigger

I had a really great couple of workouts in the last few days.  I ran on the treadmill this weekend.  Not sure why, but I am so sore! Definitely not a bad thing! I have a love hate relationship with running lately.  I either get in the groove or I don't, there is no in between.  I usually plug in and watch tv while I run, but I found my iPod this weekend and decided to download some new music to take with me to the gym. I downloaded Will.I.Am's new song called '#thatPOWER'. I put that song on repeat and just ran.  Such a good beat and it totally got me in the groove.  It was a really great run, felt like I could have ran forever! I would definitely recommend that song!

I ran so many errands this weekend. I have been looking for new lamps and decorations for my bedroom.  On Sunday evening, before I went home, I decided to stop at one last store to see if I could find anything for my bedroom. Before walking over to the home section of the store, I stopped and looked at clothes.  Although I didn't find any shirts or actual clothes, I did find some yoga pants that I really liked.  I first went to the dressing room with several pairs of yoga pants, all size large. Tried a few on, went back out and grabbed a couple mediums, then went back and tried them on, then went back out again to grab more mediums.

After three trips to the dressing room, I realized, I am still seeing myself as if I never lost weight.  I am used to just grabbing the biggest size there is and crossing my fingers, hoping that it will fit.  Each time I grab something and its too big now, I double check the size.  Maybe I was in the plus size section? Maybe I read the tag wrong? Nope, I am just smaller than I used to be.  Such a cool realization, but I am starting to wonder if I will ever see myself as just me and not the old me. I have literally never worn a size medium in yoga pants.  I thought maybe it was just the brand that ran larger, but no, ever single pair of yoga pants fit and they were a medium.

I worked out with my trainer yesterday.  Lots of squats, back work and core. I wore my new yoga pants to class and I wore a new tank top I bought.  As many of you know, I don't ever wear tank tops to the gym. Why? Because of my arms and back fat. But lately, I find myself wearing a tank top to the gym every chance I get.  My trainer happened to noticed and said, "I thought you hated tank tops?!". Another woman told me I looked great it in and totally can pull it off.  Made me feel really good.

I might still view myself as much heavier than I actually am, but I have so much more confidence than I once had. Happy and confident, this journey is so much more rewarding than I ever could have imagined.

7 lbs Progress

I am feeling really good this week. I am to the lowest weight I have been at in almost two years! I have dropped almost 7lbs in the past two weeks. I have really made an extra effort to eat better.  This means, packing lunches, lowering my carb intake and cutting out all wine! I have managed to keep myself busy in the evenings so it helps me reduce my urge to munch.  I feel like I plateaued for a solid month, so it feels really good to be back on track and losing weight.

I mentioned earlier this week that I bought two bikinis.  They both fit and I surprisingly feel fairly comfortable in them.  I decided to take pictures of myself in both bikinis - front, back and side.  I know I still am far from my goal, but I was surprised when I looked at the pictures.  I really am not as big as I think I am. I have lost quite a bit of weight now but I tend to still view myself as 'Fat Jess'. Progress pictures really help open my eyes and help me realize how far I have come.  I am really looking forward to making more progress and rocking those bikinis this summer!

Gluten Free Turkey Spaghetti Squash



Tonight, I wanted to incorporate spaghetti squash into my dinner.  I bought one last weekend and I need to use it! So I thought about doing spaghetti with the spaghetti squash and adding lean ground turkey to give it some added protein.  I kind of made up this meal as I went and I was surprised at how good it turned out.

INGREDIENTS

  • 1 spaghetti squash
  • 1/2 lb of lean ground turkey
  • 2 cups marinara sauce
  • Shredded Parmesan cheese
  • Salt and Pepper
DIRECTIONS
  1. Preheat the oven to 350 degrees F.
  2. Microwave the whole spaghetti squash for 3 minutes.  This softens the spaghetti squash so it is easier to cut in half.
  3. Cut the spaghetti squash in half and scoop out the seeds. 
  4. Place face down on a baking sheet and bake at 350 degrees for 30 minutes.
  5. While spaghetti squash is baking, place ground turkey in a frying pan over medium high heat.  Season with salt and pepper. Break up the turkey meat with a spatula.  Cook until turkey is no longer pink. I cooked mine for about 5 minutes.
  6. Once turkey meat is cooked thoroughly, add in two cups of marinara sauce.  I used about two cups, but you can add more or less depending on how thick you prefer your spaghetti sauce.
  7. Place the turkey spaghetti sauce mixture into a blender and blend until fairly smooth.  I used my Magic Bullet for this and it worked great. My sauce turned out fairly thick, but worked great.
  8. Once the spaghetti squash is cooked, use a fork to scoop out the insides and place it in a bowl.  
  9. Add turkey spaghetti sauce to the spaghetti squash and top with a little bit of Parmesan cheese.
  10. Enjoy!
Another very simple recipe, but it really tasted great. This meal works great as leftovers too!

Bikini x2



One of my goals for this summer is to finally buy and wear a bikini.  I bought a bikini about two years ago and wore it into a friends hot tub.  I kept a towel wrapped around me until I was in the hot tub so I could avoid being seen in my bikini.  So pathetic. I honestly can't ever remember feeling comfortable in a bikini.

Last summer, my family was going to to a friends timeshare for Labor Day weekend.  It was going to be a very warm weekend and I knew I needed a bathing suit if I was going to go.  I knew I was not going to wear the one bikini I owned, so I went out shopping with my sister to find a new bathing suit, a tankini.  Never in my life did I think I would be shopping for a tankini.  Tankinis, in my opinion, scream 'I think I am fat and too embarrassed to wear a bikini'. I can understand tankinis for people who are older, want to cover up and be modest.  But for only being 24, I should not be shopping for tankinis! Long story short, I refused to go with the family because I couldn't get myself to buy a tankini.

This year, my goal is to be in a bikini this summer. Even if I am only comfortable wearing it on my deck to sunbathe in, I am going to wear one.  Lately, every time I go to the store, I see tons of bikinis which reminds me bikini season is right around the corner.  If it was up to me, I would make more progress and buy a bikini when it is closer to summer.  But, stores are one season ahead and if I wait too long, there will be no bikinis left to choose from.

So, lately I have been thinking about a date.  Give myself a specific time frame of when I need to go out and buy a bikini.  I was thinking May 1st.  Figured it gave me about six weeks to make more progress until I needed to go buy a bikini.

Well, while I was out with a friend shopping this weekend, I bought TWO bikinis.  Yes, I said two.  They are a little snug, but they fit.  So, I am hoping they will still fit even if I continue to lose weight.  But, I got such a good deal on both bikinis, so if they are too big by the time summer rolls around, its totally fine by me!
Having two bikinis is a little extra motivation for me to push a little harder in the gym.  Sounds really dumb, but I plan on hanging these bikinis in a place I can see them as an extra reminder of what my summer goal is. If I put them in my dresser, I will forget all about them.  Haven't decided on a place yet!

Also, I got my new slacks in the mail.  A full size smaller and they fit awesome.  All three buttons completely button shut.  I forgot how good it feels to wear pants that actually fit! Oh the little things!

Baked Gluten Free Sweet and Sour Chicken




Adapted from: Six Sisters' Stuff

INGREDIENTS
  • 4 boneless chicken breasts
  • 1 cup cornstarch
  • 3 eggs
  • Salt and pepper
  • 1/4 cup canola oil
  • 1/4 cup and 2 tbsp Splenda sugar blend
  • 4 tbsp ketchup
  • 1/2 cup vinegar
  • 1 tbsp tamari sauce
  • 1 tsp garlic salt
DIRECTIONS
  1. Preheat oven to 325 degrees F.
  2. Chop chicken breasts into bite size pieces.
  3. In a large freezer bag, pour in cornstarch and chicken pieces.
  4. Shake the freezer bag until chicken is fully coated in cornstarch.
  5. In a small bowl, beat eggs and season with salt and pepper.
  6. Place chicken pieces in egg mixture.
  7. In a separate bowl, combine sugar, ketchup, vinegar, tamari and garlic salt. Stir and set aside.
  8. In a large frying pan, add oil and heat to medium high.
  9. Place chicken in the frying pan and cook until golden brown, chicken should not be fully cooked.
  10. In a 9x13 baking pan, add golden brown chicken and the bowl of sweet and sour sauce.
  11. Bake at 325 degrees for 30 minutes, turning halfway through.
  12. Enjoy!

Bacon Cinnamon Rolls



I absolutely was not planning on posting this recipe because this is supposed to be a healthy fitness blog and also because I am unable to taste it because it contains gluten.  But after posting a picture on Instagram and getting several requests, I will post it!

We are having a bacon breakfast potluck at work.  I needed a recipe that would be easy to make since I had very little time to cook due to bible study and something that would taste good even if it was cold. So, decided to cook Bacon Cinnamon Rolls.

I got this recipe from Pillsbury, but I made a couple changes to the recipe.

INGREDIENTS

  • 10 slices of Bacon
  • 2 cans (17.5 oz) Pillsbury® Grands!® refrigerated cinnamon rolls with cream cheese icing (5 rolls)
I made mine with a generic brand of Cinnamon rolls with cream cheese frosting which contained 8 rolls.  Just make sure you have one slice of bacon for each roll you plan on cooking.

DIRECTIONS
  1. Preheat oven to 400°F.
  2. Cook bacon. The original recipe says to cook until crisp, but I just cooked mine for a couple minutes until each slice started to curl, but they were no where near crisp.  The bacon will continue to cook in the Cinnamon roll and this way, the Cinnamon roll will soak up a little bit of the bacon fat. 
  3. Usually with bacon, I put it on paper towels to soak up all of the grease, but I just blotted the bacon this time so they still had a little grease on them.
  4. Open the can of Cinnamon rolls and unroll each roll.
  5. Lay one slice of bacon on top of each unrolled cinnamon roll, then roll them back up.
  6. Place each roll in a greased/sprayed pan. I made 16 rolls and used a 9x13 baking dish.
  7. Cook for 15-18 minutes.
  8. Let the rolls cool for 5 minutes and then ice them.
  9. Enjoy!
I have yet to try the bacon cinnamon rolls, but they look and smell so delicious!  I was in a hurry to make these and from start to finish, it took me less than 40 minutes! Pretty quick recipe.  

For once, I am so thankful I am allergic to gluten because I would be so tempted to try one!

Gym Motivation of the Day

Goodbye Fat Clothes!




This weekend was a good one!  This was the first weekend in a while where I decided to make no plans so I could stay home and spring clean!  One of my non fitness goals for the year is to give my bedroom a makeover.  I want new furniture, bedding, lamps and pictures. My bedroom is made up of my old furniture from college and none of it matches.  I am a cheap person though, so I have a hard time spending money on unnecessary items for my bedroom.  But this year, it is my goal to give myself a nice bedroom.  Saturday morning, I went to look at new bed frames with my Mom.  I have spent the last several months looking at bed frames and finally found one I liked that matched my vision and was in my price range.  When I went to look at the bed, it looked nothing like how it looked online! I ended up finding a bed frame I really liked while I was there.  The frame is much different than what I thought I wanted, but I think it looks really sharp. My Mom and I ended up going to another furniture store to look around before I decided on which frame I wanted.  To my surprise, the other furniture store was able to order the same bed frame for me that I liked - but for $70 dollars less! Very happy about that!  

My Mom convinced me to leave the store that day, think about it, then return to order the bed another weekend.  We made it halfway out of the parking lot before I told her to turn around.  I went in and bought the bed frame! I knew I wasn't going to change my mind and if I didn't just go for it and buy it, I might not have returned.  So, in one month, I will be the proud new owner of a lovely bed frame!

I spent the rest of the weekend cleaning out my bedroom, including my closet.  I tried on all the clothes I never wear anymore.  I found that some of them finally fit and some of them were too big. I decided to be brave and get my clothes out of storage.  Last year, when my boyfriend at the time moved in with me, we needed to make room for his clothes.  So, I took all of the clothes that were too small for me and put them into storage. For some reason, I just couldn't part with my clothes. Figured when I lost weight, I would be able to wear them again.  

Well, that day finally came.  All of the clothes in storage fit me again.  Old running tank tops, nice tops, sweatshirts, they all fit! So, I cleaned out all of my 'fat clothes' that are now too big for me and made room for the clothes I can finally wear again.  Out with the old and in with the 'new'.  I feel like I have a whole new wardrobe! 

I happily bagged up all of my 'fat clothes' and took them to my car to give to Value Village. Its funny though, when I was heavier, I literally could not convince myself to give away my 'skinny' clothes.  My boyfriend at the time and I even went to the extent of renting an extra storage unit to house my six bags of clothes that I no longer fit into. I paid to keep these clothes. The thought of getting rid of the clothes I was because eating was more important to me was absolutely ridiculous.  This weekend, however, I GLADLY donated all of the clothes that were too big for me.  I have absolutely no intention of EVER fitting into them again.  None.  Never going back. Ever. 

I am really happy to fit in my old clothes. Feels really good, but I am no where near my goal.  I have a long way to go, but I am so happy about my progress!

Transformation Tuesday


Happy #TransformationTuesday! I started my current job one year ago today.  The picture on the left is the picture on my badge and the one on the right was taken last Friday.  I remember seeing my picture on the left last year and thinking it was a great picture because it hid my double chin.  So thankful I am not that girl anymore.  Fit and happy is the way to go!

Gluten Free Taco Salad


This is by far one of my favorite salads.  I spiced it up last night and added some beans and corn to the mix.  So simple to throw together and it has great flavor!

INGREDIENTS

Salad:
  • 1.5 cups cooked chicken - chopped (I used frozen precooked chopped grilled chicken)
  • 3 cups of chopped romaine lettuce
  • 1 tomato - chopped
  • 1 avocado - chopped
  • 1/2 cup of black beans
  • 1/2 cup of canned corn
  • 1 tbsp cilantro - chopped
  • 1 jalapeno - chopped (optional)
  • Tortilla Chips
Dressing:
  • 3/4 cup Fat Free Catalina dressing (I used Kraft)
  • 3/4 cup of Salsa
  • 2 tbsp Taco Seasoning
DIRECTIONS
  1. In a large bowl, combine chicken, romaine, tomato, avocado, black beans, corn, cilantro and jalapeno. Stir.
  2. In a separate bowl, combine Catalina dressing, salsa and taco seasoning.  Mix well.
  3. Slowly add salad dressing to your liking.  I usually prefer more dressing.
  4. Crunch tortilla chips over the salad.  I used a handful of chips on my salad.
  5. Enjoy!
This salad serves three.  I ate some for dinner, packed some in Tupperware for lunch and still had another serving leftover.  

The entire jar of dressing is a total of 380 calories, 0 grams of fat, 78 carbohydrates. One serving is  two tablespoons which equals only 24 calories, 0 grams of fat, 5 carbohydrates.  This can easily be made vegetarian by leaving off the chicken!

190 Calorie Gluten Free BLT Wrap



I was really in the mood for a sandwhich tonight.  Something like a Chicken Club or a BLT.  I decided to give the BLT a makeover.  Is it possible to make a gluten free, low calorie BLT? You bet!

Yields 2 Servings

Ingredients
  • 2 Gluten Free Tortillas - I used Rudis
  • 4 slices of bacon - cooked
  • 1 tomato - sliced
  • 2 Iceberg lettuce leaves - chopped
  • 2 tbsp Fat Free Mayonaise
Directions
  1. Fry up the four slices of bacon
  2. Spread 1 tbsp of fat free mayonaise on each gluten free tortilla
  3. Add lettuce, tomato and two slice of bacon
  4. Enjoy!
This was so simple, but tasted great! I made one for dinner and placed the extra ingredients in Ziploc bags to take to work tomorrow for lunch.  Next time, think I may try to add some grilled chicken to add some protein to this wrap.

For anyone who is Vegetarian or Vegan, replace the bacon with Tempeh and the fat free mayonaise can be replaced with vegan mayonaise.

Calories: 190
Fat: 9.5 grams
Carbohydrates: 18 grams
Fiber: 5 grams
Protein: 7 grams

My Safety Pin Slacks



One year ago, I was in the process of making changes in my life.  I was miserable and felt like something was missing.  So, I started out by landing myself a new job.

At my previous job, I was able to wear jeans to work.  So my work clothes were my everyday clothes.  At the new job though, I had to wear business casual clothes.  This meant I needed to go shopping.  Most girls would get excited about having an excuse to go to the mall and buy new clothes.  But as someone who was overweight and unhappy with my appearance, the thought of shopping made me want to cry.

I can specifically remember this day like it was just yesterday.  My sister and I went to the mall in search of a pair of dress pants and shoes.  I can't even count how many stores we went to.  At most of the stores, I barely fit into the largest size of pants the store carried.  But even the largest size was tight at my waist and too short for me.  So my sister and I went to one last store: The Limited.

I was to the point where I had no choice, I had to find a pair of slacks in this store.  There were no other stores to go to because I had already been to them all!  To my surprise, I found a pair I really liked.  They were dressy, thin throughout the legs, slight boot cut and the perfect length to wear with flats. The only problem: they wouldn't button. No matter how much I tried to suck my stomach in, they wouldn't even come close to buttoning. So, I tried going one size up - the biggest size the store carried.  They fit.  But, there was something about the fact that they were the largest size in the store.  I couldn't face the fact that I was that big.  I really wanted to lose weight and allowing myself to buy a bigger pair of pants was not going to happen.

So I came up with a solution. Safety pins! I would buy the smaller size and safety pin them shut.  Figured it would force me to lose weight. Nice idea, right? Well, the pants started out with one safety pin.  Then I expanded them with two safety pins, then had to buy larger safety pins.  Eventually, my pants were held shut with a beautiful chain of shiny safety pins.

I was so embarrassed by this.  I had to wear long shirts that were loose to cover up all the safety pins.  I can't even count how many times the safety pins popped open and cut me, or how many times they popped open during a meeting and I had to discreetly pin them shut.  Just writing about this makes me feel bad for that girl I once was.  I was so miserable and incredibly embarrassed by my size and my weight.  I tried to deny the issue for so long.

I have since bought new slacks that button from The Limited.  They are pretty loose on me now and I finally ordered new slacks online yesterday - a size smaller I might add! But while I wait for my new pants in the mail, I decided to dig out my old safety pin slacks.  Figured they might fit now and I could maybe wear them for the next couple weeks.

As I pulled my old slacks out of my dresser, I noticed they still had the safety pins attached.  I decided to try them on. Wow. I kind of just stood there and looked at myself in the pants.  The safety pins, which were once so tight they would pop open, were now dangling.  I did it! I really did it!

While I wait for my new smaller slacks in the mail, I will wear these 'safety pin' slacks proudly.  I was once ashamed of who I was and what I looked like, but today I am proud.  Proud of who I am, what I look like and proud of how far I have come.  I am looking forward to getting my new slacks in the mail - and looking forward to buying an even smaller size in the future!

Ham and Cheese Egg Nests



I am in the middle of meal prepping this evening, but I absolutely had to share this recipe. I have been looking for breakfast recipes lately.  I love to eat breakfast for dinner and I have been looking to change up my morning breakfasts from the usual vanilla Chobani yogurt and organic banana.  I love eggs, but I rarely have time in the morning to scrammble up eggs before work.  So I found the perfect solution! Ham and cheese egg nests.

All you need is:
  • Muffin pan
  • Pam non-stick cooking spray
  • 6 slices of deli ham
  • 1/2 cup of shredded low fat cheddar cheese
  • 6 eggs
  • Salt and Pepper to taste
  1. Preheat oven to 350 degrees.
  2. Spray muffin pan with Pam non-stick cooking spray.
  3. Place each slice of deli ham in one muffin hole.
  4. On top of each slice of ham, place a pinch of cheddar cheese.
  5. Crack an egg over each slice of ham.
  6. Salt and Pepper to taste.
  7. Place in oven for 15 minutes.
  8. Enjoy!
I was planning on wrapping each of these up to take for breakfast this week.  I took a bite of one and wow, I was impressed with myself.  So, rather than having leftover chicken tacos for dinner, I had these.  Thankfully I made extras for leftovers!  Very good!

*Update: Took these to work today.  The ham keeps the eggs in place, so they aren't messy. Reheated for 45 seconds and they tasted great!

Gluten Free Black Bean Chicken Tacos


I was in a bit of a time crunch, trying to figure out something I could eat for dinner and that would be good for leftovers for the next day at work - and gluten free!  So, I decided to whip up some Black Bean Chicken Tacos.

Ingredients:
  • 4 chicken breasts
  • 1 packet of taco seasoning (gluten free if needed)
  • 1/2 cup of water
  • 1 can of black beans - drained
  • Corn Taco Shells
My Toppings:
  • 1/2 wedge Laughing Cow Queso Fresco (Only 35 calories a wedge!)
  • Shredded Lettuce
  • Chopped Tomatoes

Optional Toppings:
  • Sour Cream
  • Salsa
  • Cheese 
  • Tomato - chopped
  • Shredded Iceberg Lettuce
  • Avocado
  • Onion
Directions:
  1. Add chicken breasts to boiling water and boil for 12-15 minutes (I usually cut into my chicken after 12 minutes see if it is cooked thoroughly).
  2. Remove chicken from water and let it cool for five minutes.
  3. Once chicken is cool enough to handle, shred chicken and place in a large frying pan on medium-low heat.
  4. Add taco seasoning, 1/2 cup of water and one can of black beans.
  5. Cook on medium-low heat for 5 minutes, stirring occasionally.
  6. Optional: heat taco shells in oven at 300 degrees for 5 minutes. 
  7. Assemble tacos and enjoy!

The best part about tacos is that you can dress them up any way you would like.  Usually, I love cheese and sour cream on my tacos.  This time, however, I bought Laughing Cow Queso Fresco wedges.  I used about half a wedge on each taco which is less than 20 calories.  Great replacement for cheese and sour cream!  Salsa would be another great option.  This recipe would be great with lean ground beef or turkey as well!

I took these tacos to work for lunch and they were great! I chopped up tomatoes and lettuce and put them in Ziploc bags which made it easy to take to work.  For snacks, I brought an organic banana, vanilla chobani yogurt and carrots with a little bit of ranch.
